Summer Fruit Fun

berry-174282_640Let’s enjoy the taste of summer! Eating healthy and light is very important for all yoga practitioners – before and after yoga class. Summertime offers so many excellent ways to add more fruit to your diet.

Fresh fruit is full of goodness! We gathered some of our favorite ways to eat more fruit every day.

Let’s begin with breakfast. How about some ice cream to begin the day with? If you think ice cream is not an appropriate choice for breakfast… wait till you see this recipe! This ice cream doesn’t have any added sugar or cream/milk. It has 2 ingredients and is ready in a few minutes with some prep time. You will need a food processor (e.g. Vitamix).

For the Banana- Strawberry Ice Cream – a family favorite

6 ripe bananas – frozen, cut up in big chunks

1 quart strawberries – frozen, halved (you can be flexible… can add a bit more or less of the strawberries)

Chop them up in the food processor, wait 10-15 minutes to have the mix thaw a bit then process it again until you get a wonderful ice cream consistency. Yes, easy!

Try it with different fruits, too. You can add blueberries, raspberries or any other summer fruit to the banana base. I can’t wait to try it with peaches!

Spa water – the best thirst quencher during the summer

Most of us don’t drink enough water per day. And we don’t even notice being thirsty…. Actually the more dehydrated you are, the less thirst you will notice. Let’s change this!

Preparing spa water is very easy. You cut up the desired mix of fruit into pieces, put the pieces into a large pitcher, and fill up the jar with cold water. Refrigerate for an hour at least. Or prepare it the night before and begin your day with some healthy spa water.

You can create many different fruit mixes for your spa water. Our favorite is prepared by adding lemon, lime and orange slices plus a few fresh mint springs. Heaven!

Fruit Soups – Soup or dessert? Why not both?

These soups look lovely, and make healthy eating so delicious. Don’t have time to cook? You can prepare the raw fruit soups with a blender or food processor.

Strawberry Soup

Ingredients

  • 1 quart strawberries, halved
  • 2 cups apple juice
  • 1 cup (8 ounces) sour cream
  • 1/2 cup packed brown sugar
  • 1/2 cup honey
  • 2 tablespoons lemon juice
  • 1-1/2 cups half-and-half cream
  • 3 tablespoons orange juice, optional

In a large bowl, combine the first six ingredients. Place half of the mixture in a blender; cover and process until pureed. Transfer to a large bowl. Repeat with the remaining strawberry mixture. Stir in cream and orange juice if desired. Cover and refrigerate for 2 hours.
